LOW CARB FISH TACO BOWLS
Ingredients
4 frozen cod fillets2 tbsp ghee
2 tablespoons seasoning tacos
1/4 cup sour cream
1 1/2 teaspoons lime juice
1 teaspoon of honey
1 tablespoon of milk
a pinch of salt
2 cups pineapple lime cauliflower rice
2 cups sweet and spicy cabbage
1 avocado, chopped
1/4 cup chopped cilantro, for garnish
Instructions
- Preheat the oven to 400 degrees. Align the baking sheet with foil for easy cleaning.
- Combine melted butter and taco seasoning. Peel frozen fillets quickly. Bake for 25 minutes.
- Whisk together sour cream, lime juice, honey, milk and salt.
- Fill 4 bowls with 1/2 cup of cauliflower rice, 1/2 cup of cabbage, cabbage salad, 1 fish fillet and a few slices of avocado. Pour honey with lime and sprinkle with cilantro.
Notes
* To make this recipe even lower in carbohydrates, dip pineapple in rice with cauliflower.This recipes is adapted from this site.
