TACO CASSEROLE – LOW CARB / KETO

INGREDIENTS

1 1/2 pound ground beef
1 14.5 ounces can chop tomatoes
1 4 ounces can dice green chili peppers
2 cups cooked rice cabbage
3 tbs seasoning tbs
1 8 oz. Cheese tacos per bag

INSTRUCTIONS

  1. Make cauliflower rice (in bags or fresh) and dry to remove excess moisture.
  2. Cook the beef on the stove until brown
  3. Add tomatoes, cauliflower, seasoning with tacos and chili, mix until fully mixed
  4. In a 13 x 9 baking dish, a layer of beef mixture is enough to cover the bottom - about half
  5. Top with 2/3 cheese and spread evenly
  6. Repeat with the rest of the beef and then on top with the rest of the cheese
  7. Bake for 15-20 minutes at 350 degrees until the cheese melts
  8. Serve in a bowl alone or with sour cream and avocado
