ASPARAGUS SWEET POTATO CHICKEN SKILLET

This recipe for a frying pan of sweet potatoes with asparagus is a tasty, healthy and easy-to-cook meal that will be on your dining table in less than 30 minutes. It is gluten-free, as much as 30, paleo, and is perfect for a busy dinner during the week.

I'm sure you will like this asparagus sweet potato frying pan recipe because it is delicious and you only need three ingredients: chicken, sweet potato and asparagus. Of course, you will add some seasonings such as garlic, salt, pepper and red chili flakes, but technically they are not considered ingredients, right?

Another good point in this recipe for an asparagus pan with sweet potatoes is that it will be ready on your dining table in less than 30 minutes. So, take a pan, chopping board and chef's knife and chop all the ingredients. This is the only hard work you will have. Awesome! It's as easy as a pie. Believe me!

Ingredients

1 pound of boneless natural chicken breast
1 tablespoon of olive oil
Salt and ground fresh black pepper
3 cloves of garlic - minced
1 medium sweet potato - peeled and diced
½ cup chicken stock or water
½ pound of fresh asparagus - cut diagonally into 1 and 2 inches slices
½ teaspoon shallow sea salt
½ teaspoon freshly ground black pepper
½ teaspoon chopped red pepper

Instructions

  1. On a cutting board, chop the chicken into small pieces and season with salt and pepper.
  2. In a pan over medium heat, add olive oil, garlic and chicken.
  3. Fry the chicken for about 7-10 minutes or until it is cooked. Do not forget to mix well. Set the chicken mixture aside.
  4. Add sweet potatoes and chicken stock to the same pan.
  5. Cook for about 7-10 minutes or until sweet potatoes are cooked.
  6. Add asparagus and cook for about 4-5 minutes until cooked.
  7. Return the chicken to the pan and mix thoroughly.
  8. Season with salt, pepper and chopped red pepper.
