KETO ITALIAN CHICKEN SKEWERS


Keto Italian chicken skewers are incredibly easy to prepare, require only a few ingredients, are healthy and full of flavor. Ideal for lunch, dinner and lunch boxes.

Ingredients

1 1/2 - 2 lbs. Boneless and skinless chicken breast (dice 3 inches)
1/4 cup olive oil (optional for cooking)
1/2 cup buttermilk
1 tablespoon dried Italian seasoning
1/4 cup chopped parsley
4 garlic cloves (minced meat)
1 lemon (zest and juice)
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper

Instructions

  1. Clean the chicken by running it under cold water, pat it dry with paper towels. Cut and discard any greasy pieces.
  2. Cut the chicken into 3-inch cubes and add it to the large bag with the zipper.
  3. In a medium bowl, combine the rest of the ingredients: olive oil, buttermilk, Italian seasoning, parsley, garlic, lemon juice, lemon zest, salt and pepper. Beat until fully mixed. Pour the mixture on top of the chicken.
  4. Close the bag with a zipper, shake to evenly cover the chicken in the marinade, and leave it in the refrigerator for at least one hour or overnight. Preferably shake and toss the chicken several times during this period so that it marinates evenly.
  5. For outdoor cooking, heat the grill to hot and sprinkle it with vegetable oil. For indoor cooking, place a cast-iron oven in a medium-sized pan and add about 2 tablespoons of olive oil to it.
  6. If desired, lay chicken pieces on wooden skewers. Grill for 3-4 minutes on each side, or until the chicken is no longer pink in the middle.
  7. Serve with salad, lemon and your favorite dipping dressing.
