SLOW COOKER GARLIC HERB POT ROAST
This light pot is simmered with carrots, onions and an incredibly delicious garlic and herb sauce! Finished meat is falling apart gently. Serve mashed potatoes (or add potatoes to the slow cooker if you want) for food with maximum comfort!
We use simple ingredients in this hearty meal. In my version you will notice that I do not use flour or corn starch as a thickener. I don’t think that thick sauce is necessary for pot roast to be impressive. I also do not use red wine, which you often find in traditional fried meat recipes. You may be surprised at apple juice. This adds a hint of sweetness and another layer of flavor to this already complex and juicy dish. (I used cherry and pomegranate juice as a last resort, and both work just fine.)
The end result is absolutely amazing. You will have a lot of delicious sauce. Plus all this Whole30, gluten free and dairy free!

INGREDIENTS
3 - 3 1/2 pounds of fried beef tenderloin
2 tablespoons olive or avocado
1 pound carrots, you can use large carrots cut into 3-inch chopsticks, if necessary.
1 medium white or yellow onion, chopped in large pieces
2 cups beef broth
1 cup apple juice
1 tablespoon tomato paste
2 tbsp. Spoons of garlic
2 tablespoons dried parsley
2 1/2 teaspoons of salt
1 teaspoon of pepper
ADDITIONAL: CARDS FROM MIDDLE GOLD 1 FEET, QUARTERLY
ADDITIONAL: FRESH CHOPED PARISLEY OR THYMAN FOR GARNIS
INSTRUCTIONS
- Add oil to the pan and heat to high heat. Once the butter has warmed up, put the stew in a pan and sauté on both sides. About 3-4 minutes on each side.
- Place the roasted beef at the bottom of a 6 or 7 quart multicooker. Add onions, carrots, potatoes (optional), beef broth, apple juice, tomato paste, garlic, parsley, salt and pepper. Commotion. Cover and simmer for 7-8 hours.
- Use two forks to grind the cooked roast in the pan and add back to the slow cooker. Taste. Add extra salt or pepper as desired. Serve with light creamy mashed potatoes and season with fresh chopped parsley or thyme.
