THIS TACO CAULIFLOWER RICE SKILLET IS BURSTING WITH FLAVOR!

Ingredients

1lb. lean turkey meat
1 tablespoon avocado oil or olive oil
1 small yellow onion, diced
1 teaspoon ground cumin
1 tsp chili powder
1 tsp smoked paprika
1 (15 ounces) diced tomatoes
15 ounces of black beans dried using canned food
1.5 cups frozen organic corn
1 (12 ounces) bag of frozen cauliflower rice, melt
or 1 large cauliflower "chopped" with a food processor
sea ​​salt and freshly ground black pepper, to your taste
1 ripe side dish avocado
thinly chopped green onions
small bunch of cilantro

Instructions

  1. Heat the oil in a large frying pan over medium heat.
  2. Add minced meat, onions and seasonings.
  3. Cook by breaking meat with a wooden spoon for 10 minutes or so.
  4. Once the meat is well cooked and browned, add the tomatoes, beans, corn and cauliflower.
  5. Simmer for about 5-10 minutes and mix well to combine.
  6. Season with sea salt and pepper to your taste and garnish with fresh cilantro, green onions and avocado slices.
