Slow Cooker Chicken, Broccoli and Rice Casserole

Ingredients

1 chopped onion
Rinse and dry 1 cup long-grain brown rice (DO NOT replace white rice or any other type of rice)
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon of salt
1/4 teaspoon black pepper
2 cups low sodium chicken stock
1 pound boneless chicken breasts
1 pound broccoli into small pieces
1/2 cup plain Greek yogurt as desired, for extra creaminess
1/2 cup grated Parmesan
1 cup grated cheddar cheese

Instructions

  1. Place onion, brown rice, Dijon mustard, garlic powder, dried thyme, salt and pepper on the bottom of the slow cooker.
  2. Pour in the broth and mix until well mixed.
  3. Add chicken to the slow cooker. Sprinkle chicken with extra black pepper.
  4. Cover and cook for 2 1/2 - 3 1/2 hours, until the chicken is fried, and rice does not absorb almost the entire broth. In my slow cooker it took 3 hours at altitude.
  5. When the slow cooking time is almost over, cook the broccoli. You can steam it on the stove or in the microwave or fry in the oven. (You can also cook broccoli in a slow cooker by adding it over rice and chicken during the last hour of cooking time. If you slowly cook broccoli, it will lose its bright green color. I get better results when I cook broccoli on the stove.)
  6. When the chicken and rice are done, put the chicken on a cutting board.
  7. Add plain Greek yogurt (if used), Parmesan cheese and cheddar cheese to rice in a slow cooker. Shuffle to combine.
  8. Cut the chicken into pieces the size of a slice and add to the slow cooker along with the cooked broccoli. Stir and serve.

Notes

  • Do not replace white rice or any other type of rice. Use long grain brown rice.
  • I do not recommend cooking this recipe at a low level. Cooking at a low level results in softer rice.
  • Some readers noted that the rice in this dish is soft. Slow cooked rice will always be much softer than rice cooked on a stove or in a rice cooker. My family loves this casserole, and we do it all the time. We like the taste and how easy this recipe is. If you are worried about soft rice, this may not be the recipe for you.
  • Some recipes for slow cookers adapt easily, but this one does not. I recommend making the recipe exactly as it is written, with the understanding that all multicookers cook differently. Your casserole may take a little longer or shorter to cook, depending on your slow cooker. You will know that this is done when rice has absorbed almost all of the liquid.
  • I do not recommend doubling this recipe.
