BAKED FLOUNDER WITH LEMON AND BUTTER
Ingredients
1 1/2 lbs. Flounder fillet (or sole)
1 teaspoon of salt
1/8 teaspoon black pepper
4 tablespoons butter (melted)
2 tablespoons of fresh lemon juice
2 teaspoons of onion (chopped)
1 teaspoon of paprika (as needed)
Garnish: fresh parsley (finely chopped)
Garnish: lemon wedges (for serving)
Extra Garlic Aioli
2 medium garlic cloves
1/2 cup mayonnaise
2 tablespoons of olive oil
1 tablespoon of fresh lemon juice
Salt to taste)
Steps to do it
- Collect the ingredients.
- Preheat a shallow baking dish. Preheat the oven to 325 F / 165 C / Gas 3.
- Cut the flounder fillet into portions to size.
- Put the pieces in a prepared baking dish and sprinkle the fish with 1 teaspoon of salt and freshly ground black pepper.
- In a small bowl or measuring cup, mix melted butter, 2 tablespoons of lemon juice and chopped onion.
- Pour the lemon oil mixture over the fish.
- Then sprinkle fish with paprika.
- Bake in a preheated oven for 20-25 minutes or until the fish is cooked and peeled with a fork.
- Garnish with chopped parsley and lemon slices and serve with garlic aioli (bottom) as desired.
- Serve baked flounder with hot rice or baked potatoes, as well as stewed vegetables or salad.
Garlic aioli
- Collect the ingredients.
- Press the garlic into a small bowl and mash it well with a fork. Or mash it with a mortar and pestle.
- Add mayonnaise, olive oil and lemon juice and beat until fully mixed.
- Season with salt to taste.
- Cover and refrigerate until serving.
Tip
- Fish can quickly become stiff and dry when digested. If the fillet is very thin, check on the platform after about 10-15 minutes.
