EASY MOZZARELLA CHICKEN RECIPE

INGREDIENTS

4 5 ounces (150 grams) boneless chicken breasts
1 tablespoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon onion powder
Season with salt and pepper
1 tablespoon of olive oil
1 onion, chopped
4 garlic cloves, minced
1 fried fried pepper, (fried fried paprika), chopped
15 oz. 425 g chopped tomatoes, or tomato puree (Passata)
2 tablespoons of tomato paste with garlic and herbs, if possible
A pinch of shredded red pepper flakes
3/4 cup grated mozzarella
1 tablespoon freshly chopped parsley to decorate

INSTRUCTIONS

  1. Place the oven shelf in the middle of the oven. Preheat the broiler (or grill in Australia) over medium heat.
  2. Season the chicken with 2 teaspoons of Italian seasoning, paprika, onion powder, salt and pepper.
  3. Heat the oil in a saucepan or pan over medium heat. Cook the chicken on both sides until it is browned and cooked (about 8 minutes on each side). Transfer to a plate; set aside.
  4. Cook the onions in the same pan until transparent (about 3-4 minutes), scraping pieces of brown color from the bottom of the pan, then add the garlic and cook until aromatic (about 1 minute). Add fried peppers (or paprika), chopped tomatoes, tomato paste, chopped red pepper flakes (if any) and the remaining Italian seasoning. Mix well to mix well.
  5. Bring to a boil and let the sauce thicken, stirring occasionally (about 4 minutes).
  6. Put the chicken in the sauce and put in each breast 2-3 tablespoons of mozzarella cheese per breast. Put in the oven, fry for 1-2 minutes, or until the cheese is browned and begins to bubble.
  7. Garnish with parsley and serve.
