UNSTUFFED PEPPER BOWLS

Ingredients

2 tablespoons of olive oil, separated
1 small yellow onion, diced (1 cup)
2 cups chopped bell pepper (any color)
Salt and freshly ground black pepper to taste
1 pound of lean turkey
2 cloves of chopped garlic (2 tsp)
1 tsp chili powder
1 teaspoon ground cumin
A little dash of cayenne pepper, (optional)
1 (14.5 ounces) canned dried tomatoes
3 tablespoons minced fresh parsley
2 (10 ounces) pcs. frozen cauliflower rice cooked according to packaging instructions and seasoned with salt
1 cup finely chopped cheddar cheese (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a 12-inch non-stick pan over medium heat.
  2. Add onions and fry for 2 minutes, then add sweet pepper, season with salt and pepper and fry until soft for about 6 minutes.
  3. Transfer the pepper mixture to a plate. Heat the remaining 1 tablespoon of olive oil in a pan over medium heat.
  4. Add large crumbs to the turkey, season with salt and pepper.
  5. Let rest until golden brown at the bottom, about 2 minutes, then toss.
  6. Continue cooking and breaking the turkey for about 2 minutes until it is almost completely cooked, then add garlic, chili powder, caraway seeds and cayenne pepper.
  7. Cook the turkey, then add the tomatoes and pepper mixture and warm for about 1 minute. Add the parsley.
  8. A plate with cauliflower rice, cheddar cheese on top (I like to add it to the middle layer so that it melts well), then sprinkle with chopped turkey mix and serve warm.
